Ingredient:
1 teaspoon coriander seeds
1 teaspoon caraway seeds
1 teaspoon anise seeds
1 teaspoon black peppercorns
3 Tablespoons sesame oil
4 6-oz. salmon steaks
½ teaspoon salt, or to taste
¼ teaspoon black pepper, or to taste
Directions:
Coarsely grind together the seeds and peppercorns in a spice grinder or with a mortar and pestle.
Combine them with the sesame oil in a small bowl; mix well.
Season the salmon with salt and pepper; rub both sides of each steak with the spice-oil mixture.
Heat a large pan over medium-high heat.
Add the salmon and cook, turning it over once, until the fish is browned on the outside and opaque at the center, about 4 minutes per side.
Serve hot, with rice or vegetables on the side.
