Ingredients:
4 salmon fillets, skinned
3 Tablespoons olive oil
Black pepper to taste
¾ cup chilled pesto
½ cup grated Parmesan cheese
3 plum tomatoes, sliced
Directions:
Lightly coat a baking pan with nonstick cooking spray.
Place the fillets in the pan and drizzle them with the olive oil.
Sprinkle pepper over the salmon, to taste; gently spread pesto over the fillets.
Sprinkle about half of the cheese over top; lay tomato slices over each fillet, then sprinkle with the rest of the cheese.
Bake at 350 F for 20 minutes, until the fish flakes easily with a fork.
