4 salmon fillets
Salt and pepper to taste
1/3 cup Dijon mustard
3 Tablespoons olive oil
3 Tablespoons lemon juice
1 teaspoon minced garlic
Season the salmon with salt and pepper then place it in a greased baking dish, skin-side down.
Combine the remaining ingredients in a small bowl.
Set aside 1/3 cup of this sauce and spread the rest over the fish.
Bake at 400°F for 10 to 15 minutes, until the salmon is cooked through.
Serve with the reserved sauce drizzled over top.
